Cenote [si-nō-tē] is a deep sinkhole in limestone which contains natural reservoirs of water, typically found in the Yucatán. This is straight up delicious; vanilla & sweet spice upfront with a hint of baked agave, but what separates this from the competition is the intense smoky flavour on the finish. You can taste the quality here—a great expression of Anejo.
