Made from semi-dried grapes, this wine boasts a spicy bouquet with hints of cherry, black cherry, and plum compote. It has a fine and velvety palate, is persistent, and finishes with soft tannins.  Ripe and healthy grapes are hand-picked, with the thinnest bunches chosen, ensuring the berries are not too close to one another, allowing air to circulate. The grapes are laid out in large perforated plastic boxes to provide excellent ventilation. The boxes are stacked in the fruttaio, a large, airy room, and the grapes are periodically monitored so that the Appassimento process can take place. A selection of the grapes is slightly wilted before being subjected to soft pressing. The wine is then aged partly in steel tanks and partly in Tonneaux.
