It was a game won or lost at the selection table. After hand-sorting, we destemmed approximately 60% and left the remaining 40% as whole bunches. Gentle, slow fermentations yielded fine tannins before the wines were transferred into a mix of small and larger barrels for 14 months. Unapologetically cool climate Shiraz! A succulent wine with beautiful perfume, bright raspberry, boysenberry notes, and elegant tannins.
