A Portuguese grape variety, Touriga Nacional flourishes under the Riverina's warm sunny climate and fertile soil. At harvest, under the watchful eye of the Carver family and experienced vineyard hand, Pepe, the small compact bunches of fruit are bursting with flavour and freshness. Once in the winery, the fruit is crushed and chilled for 48 hours of cold soaking. Allowed to naturally warm and begin fermentation, the fruit undergoes a series of manual plunging and pump overs during an extended two-week period. Once pressed out, the resulting wine is racked off gross lees and matured for 6 months in French oak barrels to provide softness, nuance and texture to the final blend.
